Description

Led by the Uchronia collective of architects and designers, the café envisioned for Maison&Objet is breaking all the rules. Somewhere between a Pop-influenced setting, a living space, furniture created by neo-artisans and the “scripting” of the space, this pop-up café offers a unique place to take a break, shaking up time and space with the help of chef Julien Sebbag and drinks from Café Nuances. It’s a total experience, designed all the way down to its dismantling, which will give the entire setting a new life.

“Talented, sensitive and passionate, Julien Sebbag amazes his audience as much as he intrigues them.” A former business student, he fell in love with cooking during his year as an exchange student in London. There, he launched « Je Cuisine Chez Toi », a home-chef and catering service. His cooking reflects who he is: an offbeat, fun personality that’s a mix of Mediterranean roots and his youth spent as a pirate/rock musician between Tel Aviv and Paris. It was once his home-chef project took off that Julien Sebbag realized he wanted to host people “at his place”, in his own signature space, where cuisine and Rock’n’Roll are in total harmony. Under the guidance of the Moma Group, he created the popular restaurant Chez Oim on the second floor of the Bus Palladium, every Tuesday night. His skills were revealed to the entire world with the first season of Créatures, on the rooftop at Galeries Lafayette Paris Haussman in 2019. A self-taught chef, he became a benchmark of Mediterranean cuisine on the Parisian scene. Créatures Season 2 came into being in June 2020, followed by Tortuga, his second restaurant, offering fish recipes based on sustainable fishing practices. A rising star in this young generation of engaged chefs, Julien Sebbag, creates his cuisine and his restaurants with major awareness of sustainability, from local supply chains and local, seasonal products, down to his anti-waste stance and care for the wellbeing of his staff. In 2021, Créatures Season 3 was back for the summer, and a new restaurant, Forest, opened up at the Musée d'Art Moderne de la Ville de Paris. Recently awarded the Young Talent Award from the Gault & Millau guide, this new establishment gives pride of place to exceptional ingredients. Here, you’ll find a menu that offers vegetarian dishes, as well as fish and meat, always with total respect for animal wellbeing and local supply. Forest offers precious, comforting food in a fairytale setting that provides a getaway from the urban jungle.

Founders - Café Nuances

Charles et Raphaël Corrot both grew up in Paris, before heading over to the U.S. at age 18, with the former going to New York and the latter to Los Angeles. Once they completed their studies, these two brothers came back together around a shared passion for coffee. It is a world they wanted to transcend, with a unique concept: that of CAFÉ NUANCES. Their love of design and contemporary art was reflected in their first shop, full of contrasts that broke all the rules of the typical urban coffee shop. CAFÉ NUANCES is also five types of coffee selected with the greatest of care and with traceability and sustainability in mind, as well as the smallest number of middlemen possible.

A multidisciplinary collective more than a classical architecture firm, Uchronia takes its name from the reflection on fictitional and ephemeral time. The studio creates encompassing "places of experience", removing the barriers between technique and creativity. It transforms spaces by offering a complete artistic service ranging from architecture to layout, design and visual identity. Restaurants, apartments or fashion shows, the places designed by Uchronia have a singular and contemporary identity. In 2019, the agency won several major projects, including the renovation of the restaurant at the Museum of Modern Art, as well as that of Galeries Lafayette.

Born and raised in Africa, she has worked as a journalist for ELLE magazine after various experiences: copywriter at Publicis, consultant at UNESCO, cook at l'Arpège with Alain Passard... She is also the author of several books including "Zero Sugar", an investigation published by Les Arènes.
